Celebrate the weekend: Bella's Apricot Bellini


Bella's Apricot Bellini 
                                                                 
Celebrate the start of this spring weekend {and brunch!} with this luscious cocktail.




1- 750ml bottle prosecco, chilled
5 each of  Bella Cucina Organic Apricots in Syrup
1 teaspoon fresh lemon juice
1 Tablespoon syrup from apricots 

  
To make the bellini,  place the pitted apricot halves along with the syrup and juice into a blender. Puree the apricots until smooth. Use more of the syrup to adjust for sweetness and consistency. Pass the puree through a sieve.  
Put two tablespoons of the apricot puree in the bottom of
chilled glasses. 
Top off with ice cold prosecco.

Putting on a Party in NYC


I have a great excuse to visit NYC more often.
Our new space in Henri Bendel's "street of shops" is open and catering to a crowd of curious onlookers, die hard foodie fans and fabulous fashionistas who love to eat deliciously well, but don't cook {.they have been known to keep a spare pair of Manolo Blaniks in the oven!} .


At our recent cookbook signing and artful food & wine tasting, we put on a party to show just how easy it is to pretend you can cook! A few fresh things from the farmer's market paired with a few pantry staple condiments and finito- You are done!


We made tea sandwiches with cucumbers with Mint & Pistachio Pesto yogurt dip, crostini with dolci di latte gorgonzola and Caramelized Onions and Golden Raisins, our signature warm Artichoke Lemon Pesto dip,Creamy baked local feta with Italian Farmhouse Citrus Fennel Olives, and Bella's Dipping Crackers with fresh ricotta, Sweet Pepper Pesto, fresh corn and corn shoots from the local farmer's market. For dessert, we acted like we slaved all day, but really just put together Meyer Lemon spread with Crostata butter pastry tartlets with fresh blueberries.

The evening was made festive with a generous pouring of Prosecco from our new favorite Prosecco, Terrazzo. The gorgeous label was creator by our own label designer, the elegant and iconic Louise Fili.

A fine party, indeed.

Back to Basics


The beauty of these times is that is an opportunity to get back to the basics.
Not the bare bones back to basics that feels like we are lacking, but the kind that reminds us what really matters in our lives. The simple things that enhance our lives everyday. More people are staying at home and finding ways to eat and entertain easily and inexpensively, and maintain a delicious quality of life. These are what I call life's simple luxuries.

"Food is the easiest way to enhance our lives everyday."

Times are stressful enough, so make your life a little less stressed by feeding yourself well. Like most things, when we buy good quality, we have a more qualitative experience, so we don't feel the need to over indulge or buy in excess.

Some of the foods/ingredients I love that nurture and nourish:

- Sparkling water. I keep it chilled in the refrigerator. Soda can be an unhealthy way to quench my thirst {it doesn't} so if I have sparkling water around, I will satisfy myself in a healthy way

- Parmesan Cheese. There is no substitute for the real deal. This is a perfect example that good quality means you can use less.

- Good old fashioned sweet cream butter. No substitutes, please. A creamy European butter is what I love. I especially love to fold in Tuscan Rose & Pink Peppercorn salt and spread on toasted crostini or flatbread.

- Organic farm fresh Eggs. When in a pinch, there is no better meal than scrambled eggs for me. Fry up some applewood smoked bacon, and I've got an MFK Fisher feast, anytime of the day!

-Fresh cream. See above. Scrambled eggs just ain't the same without a splash of this luxury ingredient. Don't be afraid to indulge. A little goes a long way.

- Prosecco. I don't care if it's called the poor man's champagne. I love my bubbly Italian style. Can't beat the flavor for the price.

Starting to get the idea? Don't scrimp on the quality of your life. Invest in the "back to basics" good things that enhance your life at home. The kitchen is always a good place to start.....and end the day.

Buon Natale


Merry, Merry Christmas to all of you.
I wish you and your families a beautiful, joyful, delicious day.

Here is a festive Christmas cocktail to celebrate the day:

POMEGRANATE PROSECCO APERTIVO

1/4 cup pomegranate seeds
1 bottle Italian Prosecco Sparkling Wine
4 teaspoons rose syrup or rose flower water
Fresh mint

In a champagne flute or glass, add 1 teaspoon rose elixir or rose flower water and 1 Tablespoon pomegranate seeds. Pour in about 8 oz. chilled prosecco. Garnish with fresh mint sprigs.
